Collagen sausage casings are made from bovine collagen, which comes mostly from the corium layer of cow hides. It is edible and no harmful for people's health.
In the manufacturing process, collagen is extracted from this layer, ground into a fine slurry, extruded into a tube, and subsequently treated to enhance its strength and flexibility. Generally used for sausages like bratwurst, breakfast links, and sausages that are cooked soon after production.
